The sliced tenderloin, Wagyu cheek and ribeye are not the most generous cuts we’ve seen in a sandwich. They may look slim and lack the complete satisfaction of a hefty patty. But we’ve underestimated the grill marks on the meat – those are signs of perfect cooking precision. The dripping meats are embellished with tomatoes and pickles peeking out of the sturdy mantau buns that hold everything together. This Chinese alternative to the sesame bun is pillowy, soaking up all the juices that ooze out of the smoky meat. The bun-to-meat ratio is spot on: not too filling for the ladies but just right for the men to go for desserts after.
