A break from the usual soup base, the ramen at Marutama draws massive depths of flavour from the milky white chicken broth named Toripaitan. The homemade Hakata-styled ramen noodles swim in liquefied essence of chicken, cradling the half-boiled egg with golden yolk that’s just a millisecond past runny. The roast pork is a state of grace – the flavourful meat betrays its unassuming pinkish exterior. Stir the chopped spring onions into the ramen to release their fragrance as you slurp with gusto.
